Gaia Green Detox Soup

This vibrant, nourishing soup is the perfect way to flood your body with fresh greens and mineral rich vegetables. Inspired by natures abundance, the Gaia Green Detox Soup combines cleansing herbs, hydrating alkaline water, and fibre-packed vegetables to create a silky, satisfying meal that supports digestion, boosts energy and leaves you feeling light yet nourished. Perfect for a reset of simply to bring more greens into your day.

Ingredients (Serves 4)

1 small broccoli head, cut into florets

1 zucchini, chopped

1 fennel bulb, stalks and fronds trimmed (can be reserved for garnish or a vegetable broth)

1 leek (white and light green parts only), sliced

1 bunch kale, stems removed, roughly chopped

2 stalks celery, chopped

1 cup spinach

1 onion, chopped

2 cloves garlic

1 bunch fresh coriander

1 bunch fresh parsley

Juice of 1/2 lemon (can add more to taste)

1 Tbsp coconut oil

Salt and Pepper to taste

3-4 cups alkaline water (enough to cover vegetables)

Instructions

    1.    Sauté the aromatics

Heat coconut oil in a large pot over medium heat. Add onion, garlic, and leek. Sauté for about 5 minutes, until softened and fragrant.

    2.    Add base vegetables

Stir in fennel, celery, and zucchini. Cook for another 5 minutes to bring out their natural sweetness.

    3.    Add the greens

Add broccoli, kale, and spinach. Toss well to combine.

    4.    Season and add water

Sprinkle in Himalayan salt and pepper. Pour in enough alkaline water to just cover the vegetables (about 3–4 cups).

    5.    Simmer

Bring to a boil, then reduce heat to low. Simmer for 15–20 minutes, until all vegetables are tender.

    6.    Blend with herbs

Remove from heat. Add parsley, coriander, and lemon juice. Use an immersion blender in the pot, or carefully transfer in batches to a blender, blending until smooth.

    7.    Taste and adjust

Add more salt, pepper, or lemon juice if needed.

    8.    Serve

Ladle into bowls, garnish with fennel fronds or extra herbs, and enjoy warm.
