Banana Pancakes
Ingredients
1 cup oat flour
1 cup almond flour
1/2 teaspoon baking soda
1 1/2 cups almond milk
2 Tbsp coconut oil + more for frying
Salt to taste
Method
Combine both flours and baking soda in a bowl.
Place banana, almond milk, coconut oil and salt in a blender until smooth.
Pour over the oat mix, and stir gently until combined.
Let sit for 10 minutes
Preheat pan over medium heat with coconut oil (can use butter if not vegan). When hot, start added pancake mixture to desired size of pancake. Cook for around 2 minutes.
When the bottom is golden, flip and cook for another 2 minutes of until golden.
Drizzle over your favourite toppings and enjoy!
